- ¾ cup lukewarm water, added gradually

Method
- Add Khapli Atta and salt to a wide bowl.
- Add water gradually and bring the dough together.
- Knead for 6 to 8 minutes until the dough feels smooth and soft.
- Add a few drops of oil or ghee if you prefer a softer dough.
- Cover and rest the dough for 15 to 20 minutes.
- Divide into equal balls and roll gently into medium-thin rotis.
- Cook on a hot tawa until small bubbles appear. Flip, cook the other side, then puff directly on the flame if desired.
- Keep the rotis covered in a cloth-lined casserole so they stay soft.

Do not rush the resting step. A short rest allows the flour to absorb water more evenly, making the dough easier to roll and the rotis softer. If the dough feels dry, add water one teaspoon at a time rather than dusting it heavily with extra flour.
