Use it for rotis, parathas, pooris and any wheat-based recipe you already love — same technique, notably different grain.

How to use

Khapli flour absorbs water a little differently from standard atta — the higher fibre content means the dough benefits from a slightly longer rest.

  • For rotis and parathas: Start with the water you normally use and add it gradually. Rest the dough for 15–20 minutes, then adjust the water for your preferred softness. Cook the first batch as a small test and note the water and resting time that work best in your kitchen.
  • For pooris: Use slightly less water for a stiffer dough. The dough holds well and puffs reliably.
  • Blending tip: If you are new to Khapli flour, start with a 50:50 blend with your regular atta for the first few batches to let your household adjust to the denser texture and nuttier flavour. Shift to 100% Khapli once comfortable.
  • Chapati thickness: Roll slightly thicker than your standard roti for better puff and texture.

Storage

Because Witbran flour is freshly milled with no preservatives, proper storage extends its freshness and flavour:

  • Transfer to an airtight container immediately after opening.
  • Store in a cool, dry place away from moisture, direct sunlight and strong odours.
  • For best flavour, consume within 30 days of opening.
  • Refrigeration extends shelf life in humid climates — bring to room temperature before use.
  • Do not store near spices with strong aromas; flour absorbs odours easily.
