  • Wheat flour (maida) blending: The most common form is cheaper maida flour is mixed into besan to increase volume and reduce cost, making it unsuitable for gluten-sensitive consumers and silently diluting its nutritional value.
  • Kesari dal (Lathyrus sativus): also called grass pea, has historically been used as an adulterant in pulses and besan because it is inexpensive and visually similar to some dals. Heavy long-term consumption is associated with lathyrism, a neurological disorder linked to the neurotoxin ODAP/BOAA.
